- Get ready with all the ingredients that you will need to make the soda bread. This recipe takes only five minutes. In a bowl mix the milk with the lemon juice.
- Meanwhile in a mixing bowl combine all the dry ingredients together, both flour, salt, bicarbonate of soda. And finally add the golden syrup.
- Turn the oven to 180C. Add the water into the milk. Stir with a spoon and pour the liquid into the flour mix. Stir with a spoon (wooden or tablespoons). I have added a few wild garlic flowers. I like the taste and you can find them everywhere at the moment.
- Grease generously a loaf tin and put the mix into the tin. Bake the bread for 35-40 minutes. Leave the bread on a cooling rack. Slice the bread!
The baking soda reacts with buttermilk to quickly leaven the bread, yielding a nice fluffy loaf. In my experience, one of the things that puts people off soda bread is the bitter tang of bicarbonate of soda, so it's important to get the balance right: just. It is then cooked on a dry griddle or pan. Traditionally this was the quickest way to make soda bread for unexpected guests who drop by for a bit of craic (good fun).
