- Take 1 kg pumpkin, peeled and cut into pieces.
- Make ready 700 grams granulated sugar
- Prepare 1 cinnamon stick, (I added 2 sticks)
- Prepare 1 tsp Orange peel, grated
- Get 1 tsp vanilla extract
Instructions to make Pumpkin Compote:
- Cook the pumpkin in water for around 30 to 40 minutes. You want it soft enough to be able to mash it.
- When cooked drain the pumpkin in a sieve for a good while. Then mash well making sure there is no lumps.
- Add the mashed pumpkin back into the sieve. The pumpkin will hold a lot of water so you want to lose as much of that water as possible. I used a good amount of kitchen roll to squeeze some of the water out of the pumpkin.
- On a medium to low heat, In the same pan used to boil the pumpkin, add all the above ingredients including the mashed pumpkin.
- Simmer for about 20-25 minutes. Stirring regularly ensuring it's not sticking to the bottom.
- When it's cooked through remove the cinnamon sticks
- Transfer the compote to a sterilised glass jar, leave the lid off until its completely cooled off.
- Seal and store upto 1 month in a cool dry place.
