Instructions to make Puran poli / holige:
- Prepare the dough: - In a bowl add maida, turmeric powder, salt, oil. Now add water little by little and prepare a soft and sticky dough. I used around 1/2 cup water. Rest the dough for 2- 3 hours. After 3 hours make balls using the dough.
- Prepare the filling: - Pressure cook chanadal for 3 whistles. Drain the cooked dal. Grind cooked dal, sugar and cardomom powder to a fine paste without adding water. If Puran is watery then stir the stuff under medium flame. Now make balls out of Puran Poli dough.
- Making the Puran Poli: - Now hold one of the dough ball in your left hand and take Puran ball on right hand. Stuff Puran ball into the dough just by enlarging the dough with the movement of your fingers. When the dough covers the Puran completely, seal it on top. Dust the ball with rice flour and roll gently. Now put this rolled holige/ puran poli over hot tawa. Allow to roast on medium flame for a minute or till bubbles appear. Flip over and cook both sides pressing slightly.
