- First rinse the chana dal. In a pressure cooker, cook the dal for 5-6 whistles. Once the pressure settles down, strain the cooked dal.
- Take the sugar and cardomom seeds and use a mixer grinder to powder the sugar. You can either do this or use whole sugar. It will take time for whole sugar to melt the chana dal
- Now in a vessel, add little ghee, cooked chana dal and sugar powder. Mix it well. Make sure to use a smasher to mash the Puran mixture well. Keep it aside
- Now prepare the wheat dough as you do for regular rotis. Just that the dough should be smooth and soft. Keep it aside for 10-15 mins
- Now make small balls out of the Puran mixture. Take a medium size ball from the dough, roll it to make a flat. Place the mixture in the centre and join all the edges. Sprinkle some flour on rolling board and start rolling.
- On heated rava, add ghee and place the rolled poli. Cook it well. Turn it upside and add more ghee. More the ghee, better the taste. Serve it hot
The various names for the flatbread include Bobbattu or Baksham or Oliga in Telugu. Holige / obbattu is basically a flat bread which is stuffed with sweetened mixture. The stuffing can be bengal gram , tuvar dal , coconut , peanut , til etc. Making holige is bit time consuming but the end result is worth it. In my home whenever we are making bele (dal ) holige , we prepare a delicious.
