Steps to make Kulcha Aloo Patties:
- For kulchas Mix the maida or all-purpose flour, salt, sugar, baking powder and baking soda in a bowl.
- Make a well in the center. Add the curd, oil and water.begin to mix the flour with the liquids first and then start to knead.
- In the same bowl or cover the dough with a wet kitchen napkin. You can also lightly brush some water on the dough and cover the pan with a lid.
- Let the dough leaven for 2 hours. In the meal while take grated potatoes,add chop onion, chopped green chillies, chopped coriander leaves, Now add dry spices: red chilli powder, Garam masala sslt powder. Add Schezwan Chutney, bread crumbs and Mix everything very well.
- Divide the mixture into small or medium shaped patties You can apply some oil on your palms when making the patties or tikki.
- Heat 2 tablespoons oil till on a skillet or tawa or frying pan till it is medium hot. Gently place the tikki and begin to pan-fry them.
- Make small balls of the dough. With the rolling pin flatten the dough and roll each into a small-sized kulcha on a lightly dusted rolling board. Heat a griddle or a tawa. The tawa has to be very hot. Place the kulcha on the tawa.
- Cook one side partly till it is ¼ cooked.Flip and cook the other side till it is ½ cooked. Apply ghee or oil on both sides of kulcha whilst cooking.Cook them till it gets golden spots and is evenly cooked.
- Now apply Tomato ketchup + Mayonese mixture in one side of kulcha and place the tikkis.Now add ketchup on tikkis and fold them.
- Now heat oil in a grilling pan and press for 10 - 20 seconds now flip to another side and serve hot.
