- Make ready 1 bunch Sarson saag
- Get 1/2 bunch palak
- Make ready 1/2 bunch reddish saag
- Get 1 onion chopped (optional)
- Get 2-3 tomatoes chopped
- Prepare 2-3 green chilies slit/chopped
- Prepare 3-4 garlic cloves chopped
- Take 1 inch ginger pc chopped
- Take 1/2 tsp red chilli powder
- Prepare 1/4 turmeric powder
- Make ready As per taste Salt
- Prepare 2-3 tsp maize flour
- Take 4-5 tsp oil/butter
- Prepare For Makke Di Roti:
- Prepare 1 cup maize flour (makke ka aata)
- Take 1/2 cup wheat flour
- Prepare 1 reddish (grated/kaddu kass)
- Get 1/2 cup reddish saag (chopped)
- Get 1/2 tsp ajwain
- Take 1/4 tsp red chilli powder (optional)
- Prepare 2 tsp oil
- Make ready As per taste Salt
- Prepare As required Oil/ghee for roasting makka roti
Makki in Punjabi stands for Maize and roti is Indian flatbread. These are prevalent during the North Indian winters. If you are an expert in making Corn Tortillas, then you have it easy while making this too. Makki is a Punjabi word for maize (corn) and a yellow flour made from it is the base ingredient for this recipe.
Instructions to make Makke Di Roti & Sarson Da Saag:
- First chop all kind of saag mentioned in ingredients, and wash them nicely (3-4 water) and add them in pressure cooker. Pressure cook for one whistle on high heat.
- Once cooker is cool down, grind the saag to fine paste. (Saag also should be cool)
- In pan add 1 tsp oil, and nicely roast maize flour. And now keep this aside.
- In big pan heat oil/ghee, now add chopped garlic, ginger, green chili and chopped onions. Fry them till it comes golden brown.
- Now add tomatoes and little salt and turmeric and fry them till oil is separated.
- Now add red chilli powder, little more salt and add roasted maize flour.
- Add grinded saag and water as per your desire consistency. Cover the pan and cook for 4-5 minutes. (In between keep stirring)
- Sarson saag is ready. Enjoy by adding butter/ghee!!!
- Makke Di Roti - in bowl mix, maize flour, wheat flour, ajwain, reddish, reddish saag, salt and 2tsp oil. Mix them nicely.
- Keep adding little water and make dough like chapati. (Careful it will get crakes)
- Now make small ball, Sprinkle some maize flour on the rolling board. Place the dough ball on the rolling board. Then sprinkle some maize flour on the dough ball also.
- Roll to small to medium-sized round circle. Make into the size of a phulka or chapati but not very thin, but a little thick. Be gentle while rolling else it will break.
- You can use plastic cover for rolling (eg any daal packet plastic or butter paper)
- Now spread some ghee or oil on a hot tawa. Gently place the roti on the tawa. If there is a crack on the roti, then gently pat that portion.
- When one side is a little browned, flip the roti and apply ghee Or oil and roast it.
- Flip a 2-3 times and cook till the roti is well browned and cooked from all sides. Press the edges with a spatula so that they get cooked well.
Traditionally make ki roti is prepared by flattening a dough ball into round shape by repeatedly. Shape into a ball, flatten and pat with palm, to make a thin roti. Use dry plain flour to help. Or roll with a rolling pin. Scroll below and check more details.
