Instructions to make Peas (minji stew) with mukimo:
- Boil your meat untill it becomes soft to your likeness.
- Boil your peas for about 10 minutes.
- In another sufuria, fry your onion, add your meat, green pepper, tomato anf carrot. Allow them to cook for a minute. Add a pinch of salt and stir the ingredients together.
- Add your peas and diced potatoes, add a little amount of water and cover.
- Once your potatoes are cooked. Set aside.
- Serve with Chapati or Rice or Mukimo.
Among the Kikuyu's peas are majorly used for Mukimo,or as stew to accompaniments such as rice or chapati. A function is never complete when Mukimo is missing. It's a mixture of maize,peas/beans/black beans mashed with potatoes. Some people add ripe bananas to the mixture. Mukimo wa mbembe njua na minji.
