  4. Beat egg white and cold water; brush over rolls. Sprinkle with poppy and/or sesame seeds. With scissors, cut a 1/4-in.-deep cross on tops of rolls.
  5. Bake at 400° for 15-20 minutes or until golden brown. Remove from pans to wire racks to cool. Yield: 16 rolls.

The rolls are made to resemble a crown by using a special stamp or fashioning a knot with a rope of dough. This version uses the knot method. Using a Kaiser roll stamp, firmly press into dough without (but almost). Kaiser Rolls are called Kaiser Semmeln or Kaiser Brötchen in Germany.
